Organic Elderberry Syrup

1 pint glass mason jar

Ingredients: Organic elderberries, filtered mountain spring water, cloves, fresh ginger, cinnamon, star anise, a pinch of real salt, and a pinch of Vitamin C. Real Raw honey added when it's cool. All homemade, made with love. It's delicious! 

I add a generous amount of honey, and most people (kids including) love it, but some kids might not like the taste, just because. By all means, just mix it with their favorite juice or yogurt. 

Keep refrigereted. Always use a clean spoon.

Star anise is not a common ingredient in mainstream pharmaceuticals. However, its compound, shikimic acid, is used in the production of oseltamivir phosphate, which is the active ingredient in Tamiflu, an antiviral medication used to treat influenza (flu).

The process of making oseltamivir involves extracting shikimic acid from star anise. It's worth noting that due to the limited availability of star anise and the increased demand during flu seasons, other methods of producing shikimic acid have been developed, including fermentation-based methods using bacteria or yeast.
