Featured Recipe: Easy Grilled Organic Chicken Wings with Sautéed Bok Choy

Ingredients:

For the Chicken Wings:

  • 2 pounds NowFarms organic chicken wings
  • 1/4 cup olive oil
  • 1/4 cup soy sauce (use tamari for gluten-free option)
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional, for a spicy kick)

For the Sautéed Bok Choy:

  • 1 pound baby bok choy, halved lengthwise
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. Prepare the Marinade for the Wings: In a large bowl, whisk together olive oil, soy sauce, honey, apple cider vinegar, garlic, black pepper, smoked paprika, salt, and cayenne pepper.
  2. Marinate the Wings: Add the chicken wings to the bowl and toss to coat them evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for more intense flavor.
  3. Preheat the Grill: When ready to cook, preheat your grill to medium-high heat.
  4. Grill the Wings: Remove the wings from the marinade and place them on the grill. Cook for about 10-12 minutes per side, or until the wings are golden brown and cooked through, with an internal temperature of 165°F.
  5. Prepare the Bok Choy: While the wings are grilling, heat olive oil in a large skillet over medium-high heat. Add the garlic and sauté for about 30 seconds until fragrant.
  6. Sauté the Bok Choy: Add the bok choy to the skillet, cut side down, and cook for about 2-3 minutes until it begins to soften and brown. Turn the bok choy, add soy sauce and sesame oil, and cook for another 2-3 minutes until tender. Season with salt and pepper to taste.
  7. Serve and Enjoy: Transfer the grilled wings to a platter and let them rest for a few minutes. Serve hot alongside the sautéed bok choy, garnished with sesame seeds if desired.
