Handle raw nettles with gloves, as their tiny hairs can sting the skin. Once cooked, dried, or blended, they lose their sting completely.
To prepare:
- Rinse well while wearing gloves
- Blanch in boiling water for 1–2 minutes or sauté until wilted
- Use in soups, teas, pesto, or as a spinach substitute

Ingredients:
- 1 tbsp olive oil or butter
- 1 onion, chopped

- 4–5 cups fresh stinging nettles (handled with gloves)
- Salt & pepper to taste
