Cutlets

    Today my grandmother and I will be showing you how to make chicken cutlets. My grandmother has been making these and other variations of this recipe nearly every week for decades. These are a staple and favorite among our family. This recipe is extremely simple and flexible and only requires a few things.

 

Ingredients needed:

- 2 pounds of boneless chicken breast (You can use ground chicken, chicken thighs or turkey. Just make sure it doesn’t have bones.)

- 1 zucchini and 1 onion (A wide range of vegetables will work. You can adjust to your preference or to what’s available.)

- breading

- salt

- Olive oil (butter or lard will work just as well)

- Spices (We added paprika and garlic powder to ours but you can add what ever spice you like or leave the spices out.)

- An egg

This will yield about a dozen palm sized cutlets.

Rinse the chicken in a colander .

Wash and peel your vegetables if applicable .

Cut the chicken and veggies into a few pieces.

Feed the cut up ingredients into a meat grinder or a blender.

Add Salt, an egg, and any other spices you like.dsc05251.jpg

 

Mix it thoroughly and let it rest for about 15 minutes before the next step.

After the mix has rested prepare a pan with oil and set it on medium heat. Prepare a bowl of breading. Grab a handful of the mix and dunk it into the breading so that it is covered. Then work the cutlet into shape.

Keep doing this until the pan is full. After a few minutes flip them. They should have a nice golden color.

Once they have a dark golden color they are done. Put them in a glass container to cool. You will probably have mix left over so just repeat the steps until its all used up.

 

These cutlets make a great snack or can be cut up and put in a sandwich or eaten as a meal. They are very good with a side of mashed potatoes and a pickle or sauerkraut.
